Breakfast Tacos - An absolute crowd favorite! Served in warm tortillas with crispy bacon, potatoes, scrambled eggs and your favorite toppings!

Oh-so-crisp bacon strips, golden brown potatoes, and perfectly cheesy scrambled eggs all tucked in a warm tortilla. It’s simply perfect for breakfast (and lunch and dinner) as it comes together pretty quickly, using one skillet for everything.

And yes, you can cook your potatoes right in the bacon fat (my favorite part), but if you want to go meatless, you can skip the bacon altogether and use a bit of vegetable oil instead.

Once your potatoes are done, you can scramble up your eggs to your desired consistency. I like mine a little bit on the softer side but you can absolutely make it work to your liking (and cook longer/shorter as needed).

From there, go ahead and wrap those bad boys up and top with a little bit of pico de gallo, cheese and cilantro. Breakfast will never be the same ever again.

  • 6 slices bacon
  • 1 russet potato peeled and cut into 1/2-inch cubes
  • Kosher salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter
  • 6 large eggs lightly beaten
  • ½ cup shredded Mexican blend cheese

for serving

  • Tortillas warmed
  • Pico de gallo
  • Shredded Mexican blend cheese
  • Chopped fresh cilantro leaves

Instructions

  • Heat a large cast iron skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate, reserving excess fat in the skillet.
  • Add potatoes to the skillet and cook, stirring often, until golden brown and crisp, about 12-14 minutes; season with salt and pepper, to taste. Transfer to a paper towel-lined plate; keep warm.
  • Reduce heat to medium. Melt butter in the skillet; add eggs, and cook, stirring occasionally, until they just begin to set. Stir in cheese and continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; season with salt and pepper, to taste.
  • Serve bacon, potatoes and eggs in tortillas with desired toppings.

There’s a few steps involved in this, but my goodness is it a labor of love (of 45 minutes of course). And the end result is so worth it.

With the crispiest chicken (breasts or thighs can be used here) drizzled with a warm honey glaze and the best buttermilk waffles one can ask for – crisp on the outside, fluffy in the middle.

If honey is not your cup of tea, warm maple syrup also works beautifully here.

for the buttermilk waffles

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 ⅔ cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter melted

for the chicken

  • 1 ¼ cups all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon cayenne pepper
  • Kosher salt and freshly ground black pepper to taste
  • 2 pounds boneless, skinless chicken breasts or thighs cut into 1 1/2-inch chunks
  • 2 cups buttermilk
  • 6 cups vegetable oil
  • ¼ cup honey warmed

Instructions

for the buttermilk waffles

  • Preheat oven to 200 degrees F and a waffle iron to medium-high heat. Lightly oil the top and bottom of the waffle iron or coat with nonstick spray.
  • In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
  • In a large glass measuring cup or another bowl, whisk together buttermilk, eggs and butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  • Pour a scant 1/2 cup of the buttermilk mixture into the waffle iron, close gently and cook until golden brown and crisp, about 4-5 minutes; keep warm in oven.

for the chicken

  • In a large bowl, combine flour, cornmeal, baking powder, cayenne pepper, 2 teaspoons salt and 1 teaspoon pepper.
  • Working one at a time, dredge chicken in flour mixture, dip into buttermilk, then dredge again in flour mixture, pressing to coat.
  • Heat vegetable oil in a large stockpot or Dutch oven over medium high heat until it registers 360 degrees F on a deep-fry thermometer.
  • Working in batches, add chicken and fry until golden brown, turning occasionally, about 4-5 minutes. Transfer to a baking sheet fitted with a wire rack and keep warm.*
  • Serve immediately with waffles, drizzled with honey.

Notes

*The chicken can be kept warm, as needed, in the oven at 200 degrees F.

  • 1 1/2 tablespoons white vinegar
  • 8 large eggs
  • 8 ounces thinly sliced smoked ham
  • 4 English muffins split and toasted
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh dill

for the hollandaise sauce

  • 3 large pasteurized egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ teaspoon kosher salt
  • teaspoon cayenne pepper
  • ½ cup unsalted butter melted

Instructions

  • Heat 3 inches water and vinegar in a wide, shallow saucepan or Dutch oven over medium high heat. Bring to a boil; reduce heat and simmer.
  • Crack each egg into a separate bowl or small ramekin. Working carefully, gently slide each egg into the saucepan.
  • Cook, undisturbed, until whites are cooked through, about 3-5 minutes. Using a slotted spoon, carefully remove eggs and transfer to a paper towel-lined plate.
  • Heat a large skillet over medium high heat. Working in batches, cook ham until lightly browned and heated through, about 1-2 minutes per side.
  • Place English muffins open-faced on a platter. Top evenly with ham and eggs, drizzling the tops with hollandaise sauce, garnished with chives and dill, if desired.

  • Combine egg yolks, lemon juice, salt and cayenne pepper in a blender until pale yellow in color, about 30-60 seconds. With the motor running, add butter in a slow stream until emulsified; season with salt and pepper, to taste.

Ingredients

  • 1 (16-ounce) loaf brioche bread cubed
  • 1 (8-ounce) package cream cheese cubed
  • 10 large eggs beaten
  • 1 ½ cups whole milk
  • 1 cup canned pumpkin puree
  • cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Kosher salt
  • ½ cup chopped pecans

for the buttermilk glaze

  • 2 cups confectioners' sugar
  • 3 tablespoons buttermilk
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
  • Kosher salt

Instructions

  • Lightly coat a 9×13 baking dish with nonstick spray. Place a layer of bread cubes evenly into the baking dish. Top with cream cheese in an even layer. Top with remaining bread cubes.
  • In a large glass measuring cup or another bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla and 1/2 teaspoon salt. Pour mixture evenly over the bread cubes. Cover and place in the refrigerator for at least 2 hours or overnight.
  • Preheat oven to 350 degrees F. Remove baking dish from the refrigerator; let stand 30 minutes.
  • Sprinkle with pecans; place into oven and bake, covered, for 30 minutes. Uncover; continue to bake for an additional 25-30 minutes, or until golden brown and center is firm.
  • Serve immediately, drizzled with buttermilk glaze.

  • In a medium bowl, combine confectioners’ sugar, buttermilk, orange zest, vanilla and pinch of salt. Whisk until smooth. If the glaze is too thin, add more confectioners’ sugar as needed.

  • 2 medium russet potatoes peeled (about 1 1/4 pounds)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 tablespoons canola oil divided
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • Grate potatoes using the large holes of a box grater.
  • Using a clean dish towel or cheese cloth, drain potatoes completely, removing as much water as possible.
  • Transfer potatoes to a large bowl. Stir in garlic powder and onion powder; season with salt and pepper, to taste.

  • 8 soft boiled eggs halved
  • 1 avocado halved, seeded, peeled and sliced
  • ¼ cup shaved Parmesan

For the mustard vinaigrette

  • cup extra virgin olive oil
  • 2 ½ tablespoons white wine vinegar
  • 1 tablespoon whole grain mustard
  • 1 small shallot diced
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • Heat a large cast iron skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; transfer bacon to a paper towel-lined plate.
  • Place potatoes in a large saucepan and cover with cold salted water by 1 inch. Bring to a boil and simmer until just tender, about 7-10 minutes; drain well.

  • teaspoon ground cloves
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup pumpkin puree
  • ½ cup milk
  • ½ cup brown sugar
  • cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract

For the cinnamon sugar topping

  • 2 tablespoons ground cinnamon
  • cup sugar
  • 4 tablespoons unsalted butter melted

Instructions

  • Preheat oven to 350 degrees F. Lightly oil a mini muffin pan or coat with nonstick spray.
  • In a large bowl, combine flour, cinnamon, nutmeg, allspice, cloves, baking powder and salt.
  • In a large glass measuring cup or another bowl, whisk together pumpkin puree, milk, brown sugar, canola oil, egg and vanilla.
  • Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  • Scoop the batter evenly into the muffin tray.
  • Place into oven and bake for 10-12 minutes, or until a tester inserted in the center comes out clean.
  • To make the cinnamon sugar, combine cinnamon and sugar.
  • When the muffins are done, cool for 2 minutes and dip each muffin into the melted butter and then into the cinnamon-sugar mixture.
  • Let cool on a wire rack.

Valentine’s Day is right around the corner. And whether you need a super easy (yet incredibly fancy) dish to whip up for that special someone or you just need breakfast for dinner, THIS. IS. IT.

I mean, the title says it all. BEST EVER. Yes, this is truly the best ever steak and eggs.

I used a skirt steak here since it is quite thin and very forgiving.

It doesn’t require too much of a cook time and you won’t really need a meat thermometer either.

And while that steak is resting, go ahead and fry your eggs in that same cast iron skillet. If fried eggs are not your jam, these scrambled eggs are also perfect here. Just be sure to drizzle that fresh herb sauce everywhere.

Serve with coffee. Serve with toast. Serve with wine. Serve with all of the above.

Ingredients

  • ½ cup chopped fresh parsley leaves
  • ½ cup chopped fresh basil
  • 2 tablespoons chopped fresh chives
  • 1 small shallot diced
  • 2 cloves garlic minced
  • ¼ teaspoon crushed red pepper flakes
  • cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Kosher salt and freshly ground black pepper to taste
  • 1 ½ pounds skirt steak
  • 1 tablespoon canola oil
  • 6 fried eggs

Instructions

  • In a medium bowl, combine parsley, basil, chives shallot, garlic and red pepper flakes. Whisk in olive oil and vinegar; season with salt and pepper, to taste.
  • Using paper towels, pat both sides of the steak dry; season with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat a large cast iron skillet over medium high heat until very hot, about 1-2 minutes; add canola oil.
  • Place the steak in the middle of the skillet and cook until a dark crust has formed, about 4-5 minutes. Using tongs, flip, and cook for an additional 3-4 minutes, or until desired doneness. Let rest 5 minutes.
  • Thinly slice steak against the grain and serve with parsley mixture and eggs.

Not sure if it’s the New Year, or if it’s the quarantine-lockdown-stay-at-home-order, but I’ve been making A LOT of things from scratch.

Pizza dough. Rosemary bread. Sourdough biscuits. Pasta. English muffins. Hamburger buns. (recipes for the latter all coming soon). I HAVE BEEN MAKING ALL OF IT CONSTANTLY.

Homemade Breakfast Sausage

Nothing beats homemade! These sausage patties are so so easy to make and they’re also freezer-friendly. Win-win!

Ingredients

  • 1 tablespoon chopped fresh sage leaves
  • 2 teaspoons chopped fresh thyme leaves
  • 1 teaspoon fennel seeds crushed
  • ½ teaspoon crushed red pepper flakes optional
  • teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper to taste
  • 1 ½ pounds ground pork
  • 3 slices uncooked bacon, diced
  • 2 tablespoons maple syrup optional
  • 1 tablespoon canola oil

Instructions

  • SAGE MIXTURE: In a small bowl, combine sage, thyme, fennel seeds, red pepper flakes, nutmeg, 1 1/2 teaspoons salt and 1 teaspoon pepper.
  • In a large bowl, combine pork, bacon, maple syrup and SAGE MIXTURE; be careful not to over mix.
  • To shape the patties, scoop out 1/4 cup (about 2 ounces) of pork mixture and flatten to create 2 1/2- to 3-inch wide patties, forming about 16 patties.*
  • Heat canola oil in a large cast iron skillet over medium heat. Add sausage patties and cook until browned, about 2-3 minutes per side.

Notes

*TO FREEZE: Uncooked sausage patties can be frozen between sheets of parchment paper for up to 1 month. Cook over medium low heat, turning often, until browned and cooked through, about 10 minutes. DO NOT THAW.

HELLO FALL.

It’s been incredibly beautiful here in Chicago with its crisp Fall days. The leaves are changing colors, the sweaters are coming out, and the pumpkin pancakes are legit taking over all of our kitchens.

I mean, I may have made this 4 times this week. After all, I waited all summer just for these days! For that mile-high stack of super fluffy, incredibly buttery pumpkin pancakes with little morsels of semisweet chocolate goodness. Served with just enough maple syrup for all my morning needs.

It’s simply perfection on a plate. And I will enjoy every morning of pumpkin season for as long as I can!

  • 1 ¾ cups all-purpose flour
  • ¾ cups semisweet chocolate chips
  • 2 teaspoons brown sugar
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground cinnamon
  • 1 ¼ cups buttermilk
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • ¼ cup unsalted butter melted
  • ¼ cup maple syrup

Instructions

  • In a large bowl, combine flour, chocolate chips, brown sugar, baking powder, baking soda and salt and cinnamon.
  • In a large glass measuring cup or another bowl, whisk together buttermilk, pumpkin, eggs and melted butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  • Lightly coat a griddle or nonstick skillet with cold butter.
  • Working in batches, scoop 1/4 cup batter for each pancake. Cook until bubbles appear on top and underside is nicely browned, about 2 minutes. Flip and cook pancakes on the other side, about 1-2 minutes longer.
  • Serve immediately with maple syrup.
